Battered fish Fingers.. and baked beans..

Had some last night with corn on the cob. Tasty, quick dinner!!
 

I had an experiment for dinner. I coated imitation crabmeat in egg, dipped the pieces in panko bread crumbs and fried them in avocado oil (I don't like the smell of olive oil). There was enough oil in the pan to fry the rest of the egg to which I added lemon pepper seasoning and heat the leftover dirty rice (from a mix), so I guess in essence, it was fried rice. My experiment wound up tasting pretty darned good! I didn't even need to use tartar sauce or any additional condiments for the "crabmeat" or egg. I'll probably make a similar meal in the near future, but I want to get finer bread crumbs for next time and I'll probably use Knorr flavored rice.

Ingredients

salad: broccoli stalks, kale, radicchio, roasted sunflower seeds (sunflower seeds, sunflower oil), sweetened dried red sour cherries (cherries, sugar, sunflower oil, may contain pits), sweetened dried blueberries (blueberries, sugar, citric acid, sunflower oil, natural blueberry flavor), blanched dry roasted slivered almonds. coleslaw dressing: organic expeller pressed soybean oil, organic dried cane syrup, water, white wine vinegar, distilled vinegar, egg yolk, organic cornstarch, salt, mustard seed, white wine tarragon vinegar (contains sulfites), spice.
 
Tonight, we had a mini celebration. So, sincerely I say who needs McDonald's or Burger King? Not us, we order from PK KITCHEN. The bestest double cheeseburgers in my corner. Ooh so yummy!

Ours had lettuce, diced onions, pickles and burger sauce. One box of chips for both of us. Aldi Max Cola on ice. Dessert, peanut butter (Sunpack) creamy with Cadbury Bourneville Dark Chocolate. The make-your-own Reese's Peanut Butter Cups lol!
 
This evening I cooked another of our meat free meals, we go meat free twice a week, tonight I boiled new potatoes and green beans. While they were cooking I put in a pan a splash of olive oil, when it was hot I added crushed garlic, finely chopped spring onions, a thinly sliced red pepper and a pack of a quarter pound of olives, having first removed the olive stones and cut the olives in half.

That takes about ten minutes to cook through, which, if I have timed it right, the green beans and potatoes will be ready. Both are removed from the heat and drained. They are then added to the olive mixture, the pan is then covered by a lid and the whole lot gets swirled together. Serve it up on a pre-warmed plate and enjoy.

I nearly forgot, the meat replacement is feta cheese, grated and crumbled and left in a serving dish from which we can help ourselves.

That was followed by a berry dessert. Strawberries, raspberries, blueberries and blackberries with a generous scoop of crème fraîche.
 
I had a burger on Rosemary Focaccia bread...

I don't eat burgers at home as a rule... extremely rarely, might be every few years I'll get a hankering for one.. so I bought a pack of 4 when I was at the freezer store yesterday..... I can't believe how small they become when cooked.. just a scandal really... anyway I won't be buying any more suffice to say...

When I'm either out of burger buns or the weather's cooler, I cook the beef patties into pan, I heat up, silver skinned onions with peas, and to complete, I add a can of cream of mushrooms.

Make some mashed potatoes and serve, 1 or 2 patties per person. Quick filling dinner for weekday or weekend. 👍

Oh BTW, the best (stays good size once cooked) are the 100% beef quarter pounder s at Iceland.

I'm not a burger eater at the best of times.. very rarely do I eat them, I just won't buy them again....to make at home.. !
 
Tonight we will enjoy trout and almonds. We prefer the fish fresh so I shall be shopping early. Our evening meal will be served on a bed of long grain rice with a side sweetcorn.

@Pappy would you be interested in an authentic Scottish Shepherd's pie recipe? Made with ground lamb (aka minced lamb) carrots, onions, cheese in the mashed potatoes and lamb's gravy?

Thanks Super but we don’t prepare many of our meals from scratch. Our meals are delivered and we buy lots of prepared meals. I do make large pots of beef stews which we get 3 meals from. Wife not able to make meals much anymore. Pappy.

Understood @Pappy no worries. Since hubby passed away, we buy loads of readymade meals. However, I still cook a few dishes from scratch and Shepherd's pie is one of them.

Most frozen ones we've found in shops, are with beef mince (?? 😞) Plus they've got peas in it and we prefer carrots and onions lol.

I remember a service available in Canada, offered by social services and manned by volunteers called "Meals On Wheels". They catered for seniors, disabled and anyone over 50+ who lived alone and needed special attention.

Do you have this type of services in Florida? Take care 👍

I'd like it, @Supernatural . I may run into a problem finding ground lamb here, though... it's simply not available and I can only get any kind of lamb around Easter... usually chops or leg. Won't stop me from trying to find it, though. I already know that if I'd try to substitute another kind of meat, you'd pinch me 'cause it has to be lamb. Accurate? 🤭

Meals on wheels, yes. Seniors in Florida are well looked after. The pies we had were Marie Calandars frozen pies and were very good .

I find the majority of ready meals contain Peas... I hate peas, they use them as a cheap filler... I rarely buy ready meals.. they give me serious heartburn

Meals on wheels is available here in the UK for seniors and the disabled too.. have been for decades...
