Looking for tried & true a date nut loaf recipe that makes one loaf.
I've looked online till I'm cross eyed.
This isn't a loaf, but a date nut cake with a caramel sauce.
Recipe: Date Cake with Caramel Sauce
From: Amish Home Cooking w/Elsa
1 cup chopped dates, packed
1/4 tsp. baking powder
1 tsp. baking soda
1 cup boiling water
Preheat oven to 350ยฐ. Mix together and allow to cool while putting rest of recipe together.
1 egg pinch salt
1/2 cup brown sugar
1 tsp. vanilla
1 Tbsp. butter, softened
1/2 cup granulated sugar
Mix together until blended. Add date mixture stirring well.
1 cup pecans
1 1/4 cups flour
Toss together and then add to above mixture.
Pour into a greased 9โ x 13โ x 1" bar cookie sheet pan. Bake for approximately 20 minutes.
Caramel Sauce:
1/4 tsp. salt
1 1/2 cup brown sugar
2 cups water
Bring sugar, salt and water to a boil.
1/4 cup water
2 1/2 Tbsp. cornstarch
Mix together while above is coming to a boil. Pull sugar-mixture off of heat, slowly add cornstarch-mix whisking constantly to blend. Put back on heat and slowly boil for 5 minutes until it is thickened.
2 Tbsp. butter
1 tsp. vanilla
Remove from heat and whisk butter and vanilla in until blended. Let cool to room temperature before serving.
Serve in a bowl topped with caramel sauce and whipped cream.
