What are you cooking or baking today?

I roasted beets in the oven with olive oil, salt & pepper. I salt & peppered thick-cut chops & fried them in lard & finished them in the oven. Made some coleslaw to go with everything.
Speaking of beets, yesterday I dressed some jarred pickled beets with olive oil, grapefruit juice, chopped walnuts and Gorgonzola cheese.

Tonight, I made ramen soup with eggs stirred in. Maybe I'll make toast.
 

Pumpkin and Bacon Muffins are in the oven.
Rather moist mixture. Might need 35 minutes at 390F.
Trial and error here.
250g diced bacon, lightly fried, 2 cups mashed pumpkin, 2 lightly beaten eggs, 3 cups SR Flour, 1 cup milk, 60g butter.
Enough for 12 good sized muffins.
Snack for the cricket tomorrow and the baseball on Sunday
 

Since today is National Noodle Day & the high today will be 55ยฐ F, I got ingredient out for Kielbasa Pasta Skillet which is quick to make & filling. Side salad & bread to round it out.

1 pound kielbasa, cut in 1/4" slices
1 1/2 cup diced onion

Fry until onions are soft & kielbasa is browned.

2 large garlic cloves, minced

Add to skillet & cook for 30 second more.

2 cups chicken broth
1 diced tomato 14-ounce can
1/2 cup heavy cream
8 ounce small pasta (like Campanelle)
1/2 tsp. salt
1/2 tsp. pepper

Add stirring well & simmer for about 15 minutes or until pasta is done.

1 cup shredded parmesan

Add in & mix well.

NOTE: Campanelle I think is best. You want a pasta that will hold the sauce in nooks & crannies.
 
I've thawed a pkg. of 2 split chicken breasts. (skin and bone intact)
Have a half bag of seasoned bread cubes, fresh onions and celery for stuffing.
Frozen broccoli.

Thinking to bake the chick on a sheet pan, adding brocky later. Stuffing in a small pan.
Do you use Pepperidge Farm bread cubes? This year is the first time Iโ€™ve ever seen them in Canada so I tried them. Much better than Stove Top. My homemade stuffing is more work and my husband doesnโ€™t eat any kind of it.
 
Made sloppy joes & have enough to freeze.

I also had some potatoes that I needed to use up before I lost them, so I made a big batch of potato soup. I kept one serving out & froze the rest. I think I should have added more stock because I thought it was on the thick side a bit. Guess I can add some milk to it when I defrost it to thin it out.
 
My wife does 98% of the cooking. But once in a while, I'll still do my college days thing. The base is tomato soup, with added spices, beef, and plenty of chopped onions to make to soup thick.

Top left, my wife took a ceramics class and crafted this cup for me that I am still using it daily (even though the handle broke last year.)

Looking for tried & true a date nut loaf recipe that makes one loaf.

I've looked online till I'm cross eyed.
This isn't a loaf, but a date nut cake with a caramel sauce.

Recipe: Date Cake with Caramel Sauce From: Amish Home Cooking w/Elsa

1 cup chopped dates, packed
1/4 tsp. baking powder
1 tsp. baking soda
1 cup boiling water

Preheat oven to 350ยฐ. Mix together and allow to cool while putting rest of recipe together.


1 egg pinch salt
1/2 cup brown sugar
1 tsp. vanilla
1 Tbsp. butter, softened
1/2 cup granulated sugar

Mix together until blended. Add date mixture stirring well.


1 cup pecans
1 1/4 cups flour

Toss together and then add to above mixture.

Pour into a greased 9โ€ x 13โ€ x 1" bar cookie sheet pan. Bake for approximately 20 minutes.

Caramel Sauce:

1/4 tsp. salt
1 1/2 cup brown sugar
2 cups water

Bring sugar, salt and water to a boil.

1/4 cup water
2 1/2 Tbsp. cornstarch

Mix together while above is coming to a boil. Pull sugar-mixture off of heat, slowly add cornstarch-mix whisking constantly to blend. Put back on heat and slowly boil for 5 minutes until it is thickened.

2 Tbsp. butter
1 tsp. vanilla

Remove from heat and whisk butter and vanilla in until blended. Let cool to room temperature before serving.

Serve in a bowl topped with caramel sauce and whipped cream.
