Now that I think of it, I've eaten goat cheese so the meat probably is reminiscent of the cheese.

There are some goat cheeses I don't like it all. I can't remember the names nor the types but there's one called Humboldt Fog that is absolutely delicious and quite expensive, so I don't buy it very often. It's made in California.

Had a friend with a farm and goats, the grandkids used to enjoy going over milking the goats, bringing the milk home and making cheese themselves. I never participated in the milking part...
I liked looking at that recipe and thanks for posting it. I'll never make the cheese but I enjoy reading recipes. I especially liked that he said you could use herbs and especially, he mentioned tarragon which I think would be great.
